How to Reduce Fat in a Recipe

There are several substitutions that you can make to your favorite recipes that will lower the overall fat content without greatly compromising the taste. If you are attempting to adopt a healthier lifestyle and lower your fat intake, here are a few tips.

Lower Fat Substitutions for Cooking

Shortening, butter, or oil: Replace half of any with applesauce.  As an example if a recipe calls for one cup of shortening, replace with ½ cup shortening and ½ cup applesauce.  You may need to cut baking time by 25%.

Eggs: Use an egg substitute or use 2 eggs whites for every whole egg required. If baking do this with half the eggs to avoid a tough result.

Whole Milk: You can freely replace any milk product with a lower fat version.

Butter or Oil to Prevent Sticking: Substitute with a cooking spray or broth if frying.

Heavy Cream: In baking substitute heavy cream with light cream or half & half.

Cream Cheese: Replace with a lower fat version or try Neufchatel cheese.  In baking the no fat version has the tendency to produce an inferior product.

Sour Cream: Substitute with equal amount of non-flavored yogurt.

Evaporated Milk: Evaporated milk is also available as evaporated skim milk, look for it on the label.

Block Cheese: Replace block cheese with a lower fat version. Do not use no fat cheese in recipes that require baking as it does not melt.

Shredded Cheese: Use a sharper version and simply cut the amount by 25%. The taste will be extremely close with less fat.
